Grilled Burger with Easy Melting Cheddar Cheese

Today was Steve’s birthday and he wanted burgers, this is the perfect opportunity to try Serious Eats recipe for Easy Melting Cheese Slices. This is a take on the steamed cheeseburgers that Ted’s Restaurant in Meriden, Connecticut is known for. Now I am not a big fan of steamed meat but I do enjoy me some melty cheese.
While Steve went out to grill the burgers I made the Easy Melting Cheese Slice, which are real simple, but if you do not have a steamer big enough for more than 2 ramekins it’s a bit of a pain.
For three burgers you need 3 ounces of grated cheddar cheese, 1 1/2 tsp Wondra Flour, 3 tsp whole milk. Stir this all together and divide into 3 ramekins.
Set a steamer insert into a large sauce pot with 1 inch of water. Bring water to a simmer over medium-high heat and cover pot. When burgers are almost done place the 3 ramekins into steamer and close lid. Let steam for about 3 minutes. Carefully pick up a ramekin with a pot holder and slide or scrape cheese out of ramekin over burger.
This is kind of a neat trick, it’s like a little pile of cheese fondue on the burger. The burgers were yummy, glad I tried it but don’t know if I will do it again.
On a side note the Utz sweet potato chips with had with the burger are delicious.
